Coconut flour is very low in carbohydrates, contains no gluten, as has a high fiber content and is a good source of protein. It is made from finely ground coconut meat with most of the moisture and fat removed. It can be used for cooking and baking much like bleached, enriched flour which is flour stripped of all nutritional parts and then the manufacturer adds back in a few vitamins required by law and then they call it ‘Enriched Flour’!!
